Gervasi Destinations is excited to announce its newest restaurant concept opening at The Marketplace at Nobles Pond: OLINDA – Modern Plates + Pours.
OLINDA will offer a modern take on American cuisine, where bold, unique flavors meet thoughtful presentation. Each dish will be crafted with high-quality ingredients and creative techniques, resulting in a dining experience that’s as visually stunning as it is delicious. You’ll be able to complement your meal with expertly crafted cocktails, playful seasonal creations, and an award-winning wine selection, all enjoyed in an upbeat, social setting filled with conversation, music, and good company. The sleek, contemporary design and energetic ambiance will come together to make every sip and bite feel like an occasion.
OLINDA is our toast to the beauty of gathering. Named in honor of Gervasi matriarch Linda Swaldo, the name is derived from the Portuguese translation “Oh, Beautiful.” It reflects both the elegance of the space and the warmth of the experience. Stylish yet personal, OLINDA speaks to a celebration of togetherness while serving as a meaningful tribute to family.

We’re excited to share an exclusive design and culinary update on OLINDA, a future dining experience unlike any other Gervasi destination.
The interior design brings modern elegance and bold character to life — with blue velvet upholstery on chairs and booths, striking blue and black tiles arranged in varied directions and textures, and a breathtaking blue tile feature that inspired the entire vision. This stunning element will greet guests the moment they arrive, setting the tone for something truly special.
We’re also proud to announce Alberto Rodriguez as Executive Sous Chef of OLINDA. Watching Chef Bert grow within the Gervasi family has been an incredible journey, and we can’t wait to see the talent, passion, and creativity he brings to this exciting new role.
The menu will feature sharable plates, creative handhelds, unique entrées, a sushi & raw bar, and weekend brunch, all crafted to bring people together over bold flavors and fresh ideas. OLINDA is more than a restaurant — it’s a vibrant, elevated dining experience in the making.
