With the ongoing celebration of Gervasi Vineyard’s 15th anniversary, the favorite destination resort and spa has introduced two new bourbons to their spirits line.

The newest bourbons, Straight Bourbon Whiskey and the Single Barrel Bourbon, are aged four to five years and then filtered and prepared for bottling. The Straight Bourbon whiskey is proofed to 94 or 47% alcohol and bottled. The Single Barrel Cask Strength is left at barrel proof, typically between 114 and 119 for us, and bottled.

“The new bourbons were rooted early in the story of the distilleries,” said Gervasi’s Head Distiller, Shae Pridemore.  “We wanted a traditional bourbon that had deep roots in our local communities. I wanted to bring ingredients from our area together and show what Canton and Northeast Ohio had to offer.”

The new bourbons join the amazing line of bourbons offered at Gervasi including the Brandy Cask Bourbon – Bourbon whiskey finished in cognac casks; Maple Cask Bourbon – Bourbon whiskey finished in maple syrup casks; Rum Barrel Bourbon – Bourbon whiskey finished in rum; Wine Barrel Bourbon – Bourbon whiskey finished in wine barrels.’

Straight Bourbon Whiskey A carefully crafted bourbon aged to perfection, delivering a rich and smooth flavor profile with notes of butterscotch, caramel, dried fruits, baking spices, and sweet barrel.

Single Barrel Bourbon – A limited-edition release showcasing the depth and complexity of a single, hand-selected barrel, offering a truly unique tasting experience for bourbon enthusiasts.

Shae said, “Our original bourbon offerings are bourbon finished in secondary barrels. This early bourbon was sourced to match a similar flavor profile to what we were producing, so now that our bourbon is of age, there should be a seamless transition. These bourbons age in their original charred oak barrel for four years, and they finish in either a wine, rum, apple or brandy barrel for an extra year.”

Bourbon Perfect for New or Experienced Bourbon Enthusiasts

“We take pride in what we make here at Gervasi. I feel that these bourbons will appeal to a wide range of audiences. The Straight Bourbon is a nice evening cocktail or evening sipper, and the Single Barrel Bourbon is great as a neat drink. But no matter how you like to drink your bourbon, as long as you enjoy what is in your glass, that’s all that matters,” said Shae.

Shae recommended that however one enjoys drinking bourbon is how it should be done, on the rocks or a single ice cube, a splash of water or neat. He said these bourbons, like all of the bourbons at Gervasi, are great just the way each person likes to drink them.

Both of the new bourbons pair nicely with many different foods or enthusiasts can drink them after dinner. Gervasi has an event coming up that’s a bourbon and food pairing with Gervasi’s Head Chef Ryan Bowen.
