Gervasi has 15 ways to savor summer

August 8, 2025

The hot “dog days” of summer have arrived, and everyone is looking for ways to cool down while savoring the last weeks of the season. Gervasi Vineyard Resort & Spa (GV) has 15 perfect ways to cool down for the remaining days of summer.

1. Have a casual lunch at The Crush House starting with one of the summer cocktails or iced tea before enjoying one of the many seasonal favorites such as calamari, strawberry salad, seared salmon, short rib gnocchi, or grilled chicken piada.

2. Take time out for a leisurely, authentic Italian dinner enjoyed with a glass of one of GV’s award-winning wines at The Bistro. Try the baked lobster formaggio, house made mushroom ravioli or spaghetti al pomodoro.

3. How about taking the morning slow, enjoying the sunrise and the early part of the day at The Still House with one of GV’s specialty coffee drinks such as a latte, cappuccino, Americano, a Shot in the Dark and many other options. Don’t forget to grab a pastry to go with your coffee.

4. Enjoy a bottle of wine with your partner or friends while sitting in the Adirondack chairs next to Gervasi’s lake and watching the swans and other wildlife.

6. Explore a new favorite “light summer wine” with a tasting at The Cave. With white wines being more popular in the summer, try the Bello Bianco tasting flight. The flight includes Lucello • Pinot Grigio: Piove • Riesling: Ciao Bella • Chardonnay: Bellina.

7. Cool off by spending time inside The Marketplace for some great shopping, where you will always find hot, unique new brands to select from.

The Spa at Gervasi Vineyard offers manis and pedis along with many other ways to relax and enjoy the last days of summer.
