The GV Spotlight feature will highlight one of the restaurants or other venues at Gervasi Vineyard Resort & Spa. Each Spotlight will focus on the special features and nuances of each venue, introducing new guests or reminding regular guests of what makes each site unique.
The Still House at Gervasi Vineyard Resort and Spa (GV) serves as a distillery, coffeehouse, cocktail lounge, and bar. The design and décor follow the Tuscan-inspired ambiance that guests of GV have come to expect and enjoy.
The Still House is open daily from 7am to as late as midnight on certain days of the week. The amazing coffeehouse features a wide variety of coffee creations made with Gervasi’s own signature brand of proprietary blended and locally roasted coffee beans, all day, every day.
One of the features that makes The Still House stand out is in the evening, the venue transforms into a cocktail lounge offering specialty craft cocktails created by mixologists and featuring Gervasi’s own distilled spirits. The Still House also offers an extensive bourbon list, tequila/mezcal list, scotch list, a selection of beers, and Gervasi’s award-winning wines.
Guests will also find live music featuring local artists, offered every Wednesday – Sunday. Plus, cigar aficionados will enjoy the high-end indoor/outdoor heated cigar lounge, The Sin Room.
Behind an amazing bar that is almost as long as the room is wide, guests will see a state-of-the-art distillery where GV spirits such as vodka, gin, whiskey, and more are produced. Distillery tours are available.

Following the idea that every Italian village has a chapel, The Still House is considered the chapel of the Gervasi property. Inspired by the St. Gervasio Church in Denno, Italy, where the Swaldo family’s grandmother was baptized, the design and décor are incredible. Gervasi Spirits are crafted at a state-of-the-art distillery where guests can join one of the scheduled Bourbon Distillery Tours. Explore the art of spirit distillation as you journey through the state-of-the-art distillery.
You will learn, taste, and experience the craftsmanship that makes Gervasi’s spirits truly exceptional. Gervasi Spirits have won numerous awards over the years, including the Gold at the 2025 U.S. Open Whiskey and Spirits Championships.
In 2025, with a historical dual achievement, Gervasi Spirits was named Grand National Champion in the Spirits Division and earned the runner-up title in the highly competitive Whiskey Championship, becoming the first distillery in competition history to be top winners in both competitions. It is an incredibly high honor.
Gervasi Spirits was recognized with a total of nine medals across both championships. Included in the medal-winning entries were Gervasi’s Wine Barrel Bourbon, Small Batch Gin, and Spiced Rum, each taking home Gold, while Rum Barrel Bourbon, Maple Cask Bourbon, and Giava earned Silver in their respective categories, with Honey Heat Whiskey and Winter White Whiskey being honored with Bronze.

A New Event to Explore
One of the upcoming events is the Euchre Night on Wednesday, February 18, 2026. Enjoy an evening of cards, cocktails, and community in a relaxed setting. Entry is $15 per person and includes one Gervasi signature cocktail. Game play begins at 6:00 PM, and partners are not required, as play will rotate throughout the evening. Winners will receive a Gervasi gift card. Participants must purchase tickets in advance to play.
Come early for appetizers and drinks or stay after the games to enjoy live music until 10:00 PM. All are welcome, whether you’re a seasoned Euchre player or just in it for the fun. Come and enjoy the game.
